Instructions
- Mix together the protein powder, cocoa, xanthan gum, salt, baking soda, baking powder, and sweetener.
- Blend the macadamia nuts until they reach a powder or nut butter consistency.
- Add the nut butter to the dry ingredients.
- Incorporate the egg whites, milk, and almond extract until the dough is moistened.
- Refrigerate the mixture for at least 1 hour.
- Roll the dough into balls, adding milk if the mixture is too crumbly.
- Place the balls on a greased or parchment-lined cookie sheet.
- Bake in a preheated oven at 350°F for 4-6 minutes.
- Allow the cake balls to cool completely.
- Melt the chocolate chips and dip the balls into the melted chocolate.
- Return the balls to the cookie sheet and let the chocolate coating harden.
