Ingredients

The pasta

  • 1 pound penne pasta

The vegetables

  • 2 units Vidalia onions, thinly sliced
  • 4 cloves garlic, minced
  • 5 ounces baby spinach
  • 1 pound frozen artichoke hearts

The seasonings and liquids

  • 2 tablespoons olive oil
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 3 ½ cups water
  • ½ cup white wine
  • 1 12 ounce can evaporated milk
  • 2 tablespoons freshly squeezed lemon juice

The cheese

  • ½ cup parmesan cheese

The spice

  • pinch crushed red pepper flakes

Instructions

  1. Combine all ingredients in a large pot.
  2. Bring to a boil over medium-high heat.
  3. Simmer while stirring often until pasta is cooked and sauce thickens, about 12-15 minutes.
  4. Remove from heat and stir in parmesan cheese and lemon juice.
  5. Season to taste with salt and black pepper, let sit for 5 minutes, then serve warm.
