One Pot Spinach and Artichoke Pasta

Instructions
- Slice the mushrooms and chop the artichoke hearts into bite-sized pieces.
- Thinly slice the onion and garlic.
- In a large pot, combine the vegetable broth, olive oil, mushrooms, artichoke hearts, onions, garlic, fettuccine, oregano, thyme, and black pepper.
- Push the ingredients down to submerge them in the broth, cover the pot, and bring to a boil over high heat.
- Once boiling, stir the mixture, reduce the heat to low, and let it simmer for 10-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Add the spinach and stir until wilted (or thawed if using frozen).
- Serve hot, optionally topped with crushed red pepper and crumbled feta.
