Instructions
- Rinse the lentils thoroughly and set aside.
- In the crockpot, combine the onion, garlic, olive oil, bell peppers, and canned tomatoes.
- Add the rinsed lentils, vegetable broth, BBQ sauce, ketchup, molasses, and spices (except salt and pepper) to the crockpot and stir to combine.
- Cook on HIGH for 3-4 hours or LOW for 5 hours, stirring halfway through.
- Add salt and pepper during the last 10-15 minutes of cooking.
- Adjust the consistency by adding more broth if needed, then serve with desired toppings.
