Ingredients

The base

  • 16 oz red lentils
  • 1 cup white or yellow onion, diced
  • 2 teaspoons minced garlic
  • 1-2 teaspoons olive oil
  • 1 cup diced bell peppers
  • 15 oz canned tomatoes
  • 4 cups vegetable broth
  • cup Gluten-Free BBQ sauce
  • ¼ cup unsweetened ketchup or tomato sauce
  • 1 tablespoon molasses

The spices

  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground mustard (optional)
  • 1 teaspoon kosher salt
  • to taste black pepper

Toppings

  • to taste cilantro
  • to taste avocado
  • to taste dairy-free sour cream

Instructions

  1. Rinse the lentils thoroughly and set aside.
  2. In the crockpot, combine the onion, garlic, olive oil, bell peppers, and canned tomatoes.
  3. Add the rinsed lentils, vegetable broth, BBQ sauce, ketchup, molasses, and spices (except salt and pepper) to the crockpot and stir to combine.
  4. Cook on HIGH for 3-4 hours or LOW for 5 hours, stirring halfway through.
  5. Add salt and pepper during the last 10-15 minutes of cooking.
  6. Adjust the consistency by adding more broth if needed, then serve with desired toppings.
