Slow Cooker Vegetarian Lentil Chili

Ingredients

  • 1 each yellow onion
  • 2 cloves garlic
  • 1 15 oz. can petite diced tomatoes (with juices)
  • 1 6 oz. can tomato paste
  • 1 15 oz. can black beans, drained
  • 1 15 oz. can kidney beans, drained
  • 1 cup brown lentils, uncooked
  • 1 Tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • to taste freshly cracked black pepper
  • 2 Tbsp coconut oil
  • 4 cups vegetable broth

Instructions

  1. Dice the onion and mince the garlic.
  2. Add the onion and garlic to the slow cooker with all other ingredients and stir to combine.
  3. Cover and cook on high for 4 hours or low for 8 hours until lentils are tender.
  4. Taste and adjust salt if needed.
  5. Serve hot with your favorite toppings.
