Ingredients

Italian Sausage

  • 1 pound ground beef
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Soup

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 3-4 tablespoons tomato paste
  • 2 cups low-sodium chicken broth
  • 1 15-ounce can crushed or diced tomatoes
  • 1-1½ teaspoons salt
  • 1 cup raw cashews
  • 1 cup hot water
  • 1 large zucchini, sliced very thin
  • ½ cup chopped fresh basil

Instructions

  1. 1. Cook the ground beef with spices in a large pot until browned, then set aside.
  2. 2. In the same pot, heat olive oil and cook the onion until translucent, then add garlic and cook until fragrant.
  3. 3. Return the beef to the pot, add tomato paste, and cook until it darkens.
  4. 4. Stir in chicken broth, salt, and tomatoes, and bring to a boil before simmering for 10 minutes.
  5. 5. Blend cashews and hot water until smooth to make cashew cream.
  6. 6. Stir the cashew cream into the soup and heat through.
  7. 7. Serve the soup over zucchini slices and garnish with basil and olive oil.
