Instructions
- 1. Cook the ground beef with spices in a large pot until browned, then set aside.
- 2. In the same pot, heat olive oil and cook the onion until translucent, then add garlic and cook until fragrant.
- 3. Return the beef to the pot, add tomato paste, and cook until it darkens.
- 4. Stir in chicken broth, salt, and tomatoes, and bring to a boil before simmering for 10 minutes.
- 5. Blend cashews and hot water until smooth to make cashew cream.
- 6. Stir the cashew cream into the soup and heat through.
- 7. Serve the soup over zucchini slices and garnish with basil and olive oil.
