Whole30 Chili

Ingredients

  • 1 tbsp Olive oil
  • ½ large Onion (diced)
  • 2 large Bell peppers (diced)
  • 8 cloves Garlic (minced)
  • ¼ cup Chili powder
  • 2 tbsp Cumin
  • 1 tbsp Dried oregano
  • 2 ½ lbs Ground beef
  • 2 tsp Sea salt (divided)
  • 1 tsp Black pepper (divided)
  • 3 10-oz cans Diced tomatoes with green chiles (with liquid)
  • 1 6-oz can Tomato paste
  • 1 cup Beef bone broth (or water)

Instructions

  1. 1. In a Dutch oven, heat olive oil and sauté onions and peppers until slightly browned.
  2. 2. Add garlic, chili powder, cumin, and oregano; sauté until fragrant.
  3. 3. Add ground beef, season with half the salt and pepper, and cook until browned.
  4. 4. Stir in diced tomatoes, tomato paste, broth or water, and remaining salt and pepper; bring to a simmer.
  5. 5. Cover and simmer for about an hour.
