Whole30 Beef Chili

Ingredients

The base

  • 2 tablespoons avocado oil
  • 1 cup yellow onion, diced
  • 4 cloves garlic, minced
  • 2 lb. grass fed ground beef

The vegetables

  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 poblano pepper, diced
  • cups diced carrots
  • 1 cup celery, diced

The liquids

  • 1 tablespoon tomato paste
  • 28 oz. diced fire roasted tomatoes
  • 14 oz. crushed fire roasted tomatoes
  • 1 cup beef bone broth

The spices

  • 2 tablespoons chili powder
  • tablespoons cumin
  • 1 tablespoon smoked paprika
  • ½ tablespoon ground coriander
  • 1 teaspoon salt

Instructions

  1. Heat a large dutch oven to medium high heat and add avocado oil and onions, sauté until translucent.
  2. Add minced garlic and sauté for 30 seconds while stirring.
  3. Add ground beef and cook until no longer pink, breaking it up as it cooks.
  4. Mix in spices until well combined with the meat.
  5. Add diced vegetables and cook for 2 minutes.
  6. Stir in tomato paste, diced tomatoes, crushed tomatoes, and beef broth, then cover.
  7. Keep heat at medium high and let the chili cook for 15 minutes before serving.
