Ingredients

The chili

  • 2 teaspoons vegetable oil
  • 2 pounds ground beef
  • ¾ cup onion, finely diced
  • 1 tablespoon minced garlic
  • 1 28 ounce can diced tomatoes
  • 3 8 ounce cans tomato sauce
  • cups beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons cocoa powder
  • 1 teaspoon brown sugar
  • teaspoons salt
  • ¾ teaspoon pepper
  • 2 15 ounce cans kidney beans

Toppings

  • to taste shredded cheese
  • to taste sour cream
  • to taste green onions
  • to taste tortilla strips

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat.
  2. Add ground beef, season with salt and pepper, and cook until browned.
  3. Drain excess grease and add onion, cooking until softened.
  4. Stir in garlic and cook for an additional 30 seconds.
  5. Add diced tomatoes, tomato sauce, beef broth, and spices, then bring to a simmer.
  6. Cook for 30-40 minutes, stirring occasionally, until thickened.
  7. Add kidney beans and cook for another 10 minutes.
  8. Taste and adjust seasoning if necessary, then serve with toppings.
