Ingredients

Chili Seasoning

  • 4 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1-2 teaspoons chipotle chili powder
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Chili Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 8 cloves garlic, minced
  • 2 pounds ground beef
  • 2 cans (15.5 ounces) kidney beans, drained and rinsed
  • 2 cans (14.5 ounces) fire-roasted diced tomatoes with green chiles, undrained
  • 1 can (28 ounces) tomato purée
  • 1 leaf bay leaf

Toppings

  • to taste shredded cheese
  • to taste sour cream
  • to taste thinly sliced scallions

Instructions

  1. Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
  2. Heat olive oil in a Dutch oven or stock pot over medium-high heat until shimmering, then add onions, bell pepper, and chili seasoning. Cook until softened.
  3. Stir in minced garlic and cook until fragrant, then add ground beef and cook until no longer pink.
  4. Stir in kidney beans, tomatoes, tomato purée, and bay leaf. Bring to a simmer, cover, and cook for 30 minutes.
  5. Remove the lid and continue to simmer for an additional 30 minutes.
  6. Remove the bay leaf, season to taste with salt and pepper, and serve with desired toppings.
