Instructions
- Make the chili seasoning by whisking together the chili powder, cumin, oregano, thyme, chipotle chili powder, coriander, salt, and pepper in a small bowl.
- Heat olive oil in a Dutch oven or stock pot over medium-high heat until shimmering, then add onions, bell pepper, and chili seasoning. Cook until softened.
- Stir in minced garlic and cook until fragrant, then add ground beef and cook until no longer pink.
- Stir in kidney beans, tomatoes, tomato purée, and bay leaf. Bring to a simmer, cover, and cook for 30 minutes.
- Remove the lid and continue to simmer for an additional 30 minutes.
- Remove the bay leaf, season to taste with salt and pepper, and serve with desired toppings.
