Classic Chili with Beef

Instructions
- Heat oil in a Dutch oven or stock pot to medium heat.
- Add onion and sauté until starting to soften.
- Add ground beef and cook, breaking it up until browned.
- Stir in garlic, chili powder, salt, black pepper, and tomato paste.
- Add crushed tomatoes, kidney beans, and beef stock, then bring to a simmer.
- Cook for 10-15 minutes, then taste and adjust seasoning if necessary.
- Divide chili into bowls and top with diced avocado and shredded cheddar cheese.
