Ingredients

Main Ingredients

  • 1 tablespoon oil
  • 1 medium yellow onion, peeled and diced
  • 1 ½ pounds lean ground beef
  • 5-6 cloves garlic, peeled and minced
  • 3 tablespoons chili powder
  • 1 ½ teaspoons kosher or sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons no salt added tomato paste
  • 32 ounces no salt added crushed tomatoes
  • 2 15-ounce cans no salt added dark red kidney beans, rinsed and drained
  • 1-2 cups unsalted beef stock

Toppings

  • 2 medium avocados, peeled and diced
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. Heat oil in a Dutch oven or stock pot to medium heat.
  2. Add onion and sauté until starting to soften.
  3. Add ground beef and cook, breaking it up until browned.
  4. Stir in garlic, chili powder, salt, black pepper, and tomato paste.
  5. Add crushed tomatoes, kidney beans, and beef stock, then bring to a simmer.
  6. Cook for 10-15 minutes, then taste and adjust seasoning if necessary.
  7. Divide chili into bowls and top with diced avocado and shredded cheddar cheese.
