Instructions
- Cook the ground meat in a Dutch oven over medium heat until browned.
- Remove the meat and set aside in a bowl.
- Add avocado oil to the Dutch oven and sauté onions, celery, bell pepper, jalapeño, and garlic until tender.
- Stir in chili powder, oregano, cumin, tomato paste, garlic powder, bay leaves, salt, and pepper until combined.
- Add beef broth and diced tomatoes with their juice, then stir.
- Return the meat to the pot and bring to a low boil.
- Reduce heat and let simmer for 20-25 minutes, stirring occasionally.
- Remove from heat and let rest for 5-10 minutes before serving.
- Garnish with avocado, green onions, yellow onions, and jalapeño.
