Ingredients

The Chili Base

  • 2 tablespoon avocado oil
  • 2 pounds ground meat (beef, bison, turkey, or chicken)
  • 2 cups chopped onions
  • 2 tablespoon minced garlic
  • 1 large red bell pepper
  • 1 cup chopped celery
  • 1 whole jalapeño pepper
  • 2 tablespoon tomato paste
  • ½ tablespoon dried oregano
  • 1 tablespoon garlic powder
  • 2 bay leaves
  • 4 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 24 oz fire-roasted diced tomatoes
  • 1 cup beef broth or chicken broth
  • teaspoon salt
  • to taste pepper

Garnishes

  • to taste sliced green onions
  • to taste chopped yellow onions
  • to taste diced avocado
  • to taste fresh or pickled jalapeño slices

Instructions

  1. Cook the ground meat in a Dutch oven over medium heat until browned.
  2. Remove the meat and set aside in a bowl.
  3. Add avocado oil to the Dutch oven and sauté onions, celery, bell pepper, jalapeño, and garlic until tender.
  4. Stir in chili powder, oregano, cumin, tomato paste, garlic powder, bay leaves, salt, and pepper until combined.
  5. Add beef broth and diced tomatoes with their juice, then stir.
  6. Return the meat to the pot and bring to a low boil.
  7. Reduce heat and let simmer for 20-25 minutes, stirring occasionally.
  8. Remove from heat and let rest for 5-10 minutes before serving.
  9. Garnish with avocado, green onions, yellow onions, and jalapeño.
