Ingredients

The chili

  • 1 lb ground chicken
  • 1 onion diced
  • 1 green bell pepper diced
  • 4 cloves garlic, minced
  • 1 tbsp avocado oil
  • 1 28 oz can diced tomatoes
  • 1 15 oz can pinto beans
  • 1 15 oz can black beans
  • 1 cup chicken or veggie broth

Chili seasoning

  • 1 tbsp chili powder
  • 1 tbsp coconut sugar
  • 2 tsp smoked paprika
  • tsp sea salt
  • 1 tsp cumin
  • ½ tsp chipotle powder (optional)

Optional toppings

  • to taste sliced avocado
  • to taste shredded cheese
  • to taste sour cream
  • to taste diced onions
  • to taste diced jalapeños
  • to taste bacon bits

Instructions

  1. Prep the garlic, onion, and bell pepper.
  2. Heat a pot over medium heat and add oil, onion, garlic, bell pepper, and ground chicken. Cook until the chicken is browned.
  3. While the chicken is cooking, mix the chili seasoning ingredients in a small bowl.
  4. Once the chicken is browned, add the chili seasoning and stir to combine.
  5. Add the canned tomatoes, pinto beans, black beans, and broth. Stir to mix.
  6. Bring the chili to a quick boil, then reduce the heat to low and simmer until ready to serve.
  7. Taste and add more salt if needed. Serve in bowls with optional toppings.
