Ingredients

The chili

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 2 medium bell peppers
  • 4 cloves garlic
  • 1 can black beans
  • 1 can kidney beans
  • 28 oz diced tomatoes
  • 2 tbsp tomato paste
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 cup chicken broth
  • 2 small jalapeño peppers

Toppings

  • to taste sour cream or Greek yogurt
  • to taste shredded cheddar cheese
  • to taste jalapeños
  • to taste tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add diced onions, bell peppers, and garlic, cooking until onions soften.
  3. Add ground chicken and cook until browned and cooked through.
  4. Stir in tomato paste and cook briefly.
  5. Add diced tomatoes, chicken broth, beans, and spices; cover and simmer.
  6. Taste and adjust seasoning if necessary.
  7. Serve with desired toppings.
