Quick Ground Turkey Chili

Ingredients

The chili

  • 2 tablespoons olive oil
  • 1 large yellow or white onion, diced
  • 1 pound 85% lean ground turkey
  • 1 teaspoon salt
  • ¼ cup tomato paste
  • 4 cloves garlic, minced or pressed
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • ½ teaspoon black pepper
  • 14 ounces crushed or diced tomatoes
  • 15 ounces pinto beans, drained and rinsed
  • 15 ounces kidney beans, drained and rinsed
  • 1 cup chicken broth

Optional toppings

  • to taste sour cream
  • to taste shredded cheese
  • to taste cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add ground turkey and salt, cooking until browned.
  4. Stir in tomato paste, garlic, chili powder, cumin, and pepper, cooking for 1 to 2 minutes.
  5. Add tomatoes, drained beans, and broth, bringing to a low simmer.
  6. Simmer uncovered for 20 to 30 minutes until thickened.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve in bowls and top with optional toppings if desired.
