Ingredients

The base

  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 5 cloves garlic, chopped
  • ½ tsp kosher salt
  • 1 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tbsp tomato paste
  • 1 chipotle chile en adobo coarsely chopped, with 1 tablespoon sauce

The protein

  • 1 lb lean ground turkey

The liquids

  • 1 12-ounce Mexican lager-style beer
  • 1 14 ½-ounce can diced tomatoes
  • 1 15 ½-ounce can kidney beans, rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion, garlic, salt, chili powder, and oregano; cook until fragrant and soft.
  3. Stir in tomato paste and chipotle chili; cook for another minute.
  4. Add ground turkey, breaking it up, and cook until no longer pink.
  5. Pour in the beer and simmer for about 10 minutes.
  6. Add diced tomatoes and kidney beans; bring to a boil.
  7. Cook uncovered, stirring occasionally, until thickened, about 10 minutes.
  8. Serve in bowls and add desired toppings.
