Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion, garlic, salt, chili powder, and oregano; cook until fragrant and soft.
- Stir in tomato paste and chipotle chili; cook for another minute.
- Add ground turkey, breaking it up, and cook until no longer pink.
- Pour in the beer and simmer for about 10 minutes.
- Add diced tomatoes and kidney beans; bring to a boil.
- Cook uncovered, stirring occasionally, until thickened, about 10 minutes.
- Serve in bowls and add desired toppings.
