Ingredients

  • 2 lbs lean ground turkey
  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 jalapeños chopped
  • 5 cloves garlic, minced
  • 1 can crushed tomatoes (28 oz)
  • 1 can petite diced tomatoes (15 oz)
  • 1 cup low sodium beef broth
  • 3 tablespoons tomato paste
  • 1 teaspoon hot sauce
  • 1 can kidney beans (15 oz), drained and rinsed
  • 3 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • a pinch cayenne pepper
  • 1 packet Stevia

Instructions

  1. Brown the ground turkey in a large pot over medium-high heat, then drain excess liquid.
  2. Sauté the onion, bell peppers, and jalapeños in olive oil until softened, then add garlic and cook briefly.
  3. Combine the cooked turkey with the sautéed veggies and all remaining ingredients, bring to a boil.
  4. Reduce heat, cover, and let simmer for 30 minutes to 1 hour, stirring occasionally.
  5. Serve in bowls with desired toppings.
