Instructions
- 1. In a large pot, sauté the onion in olive oil over medium-low heat until translucent.
- 2. Add the carrots and continue cooking until they are soft.
- 3. Add the garlic and cook for another 30 seconds.
- 4. Add the beans, chicken, tomatoes, chicken broth, and seasonings to the pot.
- 5. Bring the mixture just to a boil, then lower the heat and simmer for 30 minutes.
- 6. Taste the chili and adjust the seasonings as needed.
- 7. Serve warm over rice and garnish if desired. Refrigerate or freeze leftovers.
