Ingredients

The base

  • 1 tbs olive oil
  • 1 small onion, diced
  • 2 medium carrots, peeled and diced
  • 2 cloves garlic
  • 4 cups navy beans or other beans
  • 3 cups shredded chicken
  • 3 lbs tomatoes, skin and seeds removed
  • 3 cups chicken broth
  • 1 tsp salt
  • tsp chili powder
  • ¾ tsp cumin

Optional garnishes

  • to taste sour cream
  • to taste grated cheese
  • to taste crushed tortilla chips

Instructions

  1. 1. In a large pot, sauté the onion in olive oil over medium-low heat until translucent.
  2. 2. Add the carrots and continue cooking until they are soft.
  3. 3. Add the garlic and cook for another 30 seconds.
  4. 4. Add the beans, chicken, tomatoes, chicken broth, and seasonings to the pot.
  5. 5. Bring the mixture just to a boil, then lower the heat and simmer for 30 minutes.
  6. 6. Taste the chili and adjust the seasonings as needed.
  7. 7. Serve warm over rice and garnish if desired. Refrigerate or freeze leftovers.
