Three Bean Chicken Chili

kidney beans, drained and rinsed

chili pinto beans

cannellini beans, drained and rinsed

The seasonings

corn masa or fine cornmeal

chili powder

ground cumin

dried oregano

sea salt or to taste
Instructions
- Heat olive oil in a large skillet or pot and sauté chopped onions and minced garlic until softened.
- Add brown sugar and mix well, cooking for an additional 2 minutes.
- If using, add bourbon to the pot and allow it to burn off for a minute.
- Add ground chicken and brown it, stirring continuously to break it up.
- Once browned, add seasonings and mix until well blended.
- Add crushed tomatoes, chicken broth, and all beans, stirring to combine.
- Reduce heat to simmer and cook for 1 to 2 hours, stirring occasionally.
- Adjust thickness with water if necessary and taste for seasoning.
- Serve with your favorite toppings.
