Instructions
- Prepare the dressing by whisking together mustard, apple cider vinegar, honey, smoked paprika, cinnamon, garlic, olive oil, salt, and pepper in a small bowl.
- In a large bowl, massage the torn kale with a pinch of salt until it becomes tender and fragrant.
- Add the shredded brussels sprouts, roasted butternut squash, red onion, cranberries, pepitas, sliced apple, and goat cheese to the kale.
- Toss the salad with the dressing just before serving.
