Ingredients

The salad

  • 3 cups torn kale
  • 2 cups shredded brussels sprouts
  • ½ cup roasted butternut squash
  • ¼ cup sliced red onion
  • cup dry cranberries
  • ¼ cup raw pepitas
  • 1 whole granny smith apple
  • 2 oz crumbled goat cheese

The dressing

  • 1 tablespoon whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cinnamon
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • to taste salt & pepper

Instructions

  1. Prepare the dressing by whisking together mustard, apple cider vinegar, honey, smoked paprika, cinnamon, garlic, olive oil, salt, and pepper in a small bowl.
  2. In a large bowl, massage the torn kale with a pinch of salt until it becomes tender and fragrant.
  3. Add the shredded brussels sprouts, roasted butternut squash, red onion, cranberries, pepitas, sliced apple, and goat cheese to the kale.
  4. Toss the salad with the dressing just before serving.
