Kale Brussels Sprout Salad

Ingredients

The salad

  • ½ bunch Curly kale
  • ½ lb Brussels sprouts
  • ½ cup Sugar-free dried cranberries
  • 6 slices Cooked bacon
  • ½ cup Walnuts
  • ¼ cup Blue cheese crumbles

The dressing

  • cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Dijon mustard
  • ½ tsp Garlic powder
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Shave the brussels sprouts using a food processor with a slicing blade.
  2. Chop the kale leaves in the food processor using the same slicing blade.
  3. In a large bowl, whisk together the olive oil, mustard, lemon juice, garlic powder, salt, and pepper until emulsified.
  4. Add the shredded brussels sprouts and kale to the bowl, along with cranberries, bacon, walnuts, and blue cheese. Toss to coat.
