Ingredients

The salad

  • 2 pounds fresh Brussels sprouts, cored and thinly sliced
  • 1 pound fresh cranberries, washed
  • ½ cup chopped walnuts, toasted
  • 4 slices cooked bacon, chopped
  • 2 ounces goat cheese, crumbled

The dressing

  • 1 cup water
  • 1 cup granulated sugar
  • Zest and juice of 2 medium lemons lemon
  • 1 ½ tablespoons honey
  • ¼ cup extra virgin olive oil
  • ½-1 teaspoon coarse salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Boil water and sugar in a saucepan until dissolved, then cool slightly.
  2. Soak cranberries in the sugar water overnight in the refrigerator, then dry them.
  3. Whisk together lemon zest and juice, honey, olive oil, salt, and pepper in a bowl.
  4. Add Brussels sprouts to the dressing and toss to coat.
  5. Transfer Brussels sprouts to a serving bowl and top with cranberries, goat cheese, bacon, and walnuts.
  6. Serve immediately.
