Crispy Brussels Sprouts Salad with Bacon

Ingredients

  • 2 pounds Brussels sprouts
  • 2 tablespoons Olive oil
  • to taste Sea salt
  • to taste Black pepper
  • 8 ounces Bacon
  • 2 tablespoons Balsamic vinegar
  • ½ cup Pomegranate arils

Instructions

  1. Preheat the oven to 425°F and place a baking rack at the bottom.
  2. On a rimmed baking sheet, toss the Brussels sprouts with olive oil, sea salt, and black pepper.
  3. Flip each Brussels sprout so the cut side is facing down on the baking sheet.
  4. Chop the bacon into 1-inch pieces and sprinkle it over the Brussels sprouts.
  5. Bake for approximately 23-25 minutes until the sprouts are brown and the bacon is crispy.
  6. Remove from the oven and drizzle balsamic vinegar over the Brussels sprouts, tossing to combine.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Plate the salad and garnish with pomegranate arils, then serve.
