Instructions
- Preheat the oven to 425°F and place a baking rack at the bottom.
- On a rimmed baking sheet, toss the Brussels sprouts with olive oil, sea salt, and black pepper.
- Flip each Brussels sprout so the cut side is facing down on the baking sheet.
- Chop the bacon into 1-inch pieces and sprinkle it over the Brussels sprouts.
- Bake for approximately 23-25 minutes until the sprouts are brown and the bacon is crispy.
- Remove from the oven and drizzle balsamic vinegar over the Brussels sprouts, tossing to combine.
- Taste and adjust seasoning with more salt and pepper if needed.
- Plate the salad and garnish with pomegranate arils, then serve.
