Ingredients

  • lbs Brussels sprouts
  • 2 cloves garlic
  • 3 tablespoons olive oil or avocado oil
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon fine salt
  • teaspoon black pepper
  • 4 slices bacon
  • ¾ cup pecan halves
  • ½ cup dried cranberries
  • ¼ cup feta cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and trim the Brussels sprouts, slicing them in half or quarters.
  3. Mix olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  4. Toss the Brussels sprouts with the oil mixture to coat evenly.
  5. Arrange the Brussels sprouts on a baking sheet and roast for 20-25 minutes until tender and golden brown.
  6. Toss the roasted Brussels sprouts with pecans, bacon, and cranberries.
  7. Top with feta cheese and serve warm.
