Balsamic Brussels Sprouts with Bacon

Ingredients

The sprouts

  • 2 pounds Brussels sprouts, trimmed and cut in half

The bacon

  • 5 ounces bacon, diced into ¼-inch pieces, cooked until crisp

The glaze

  • 6 tablespoons neutral oil (like avocado oil)
  • ¼ cup balsamic vinegar
  • 2 tablespoons real maple syrup
  • to taste Kosher salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 400º F.
  2. In a small saucepan, bring the balsamic vinegar to a boil and simmer until reduced by half, then stir in the maple syrup.
  3. Place the Brussels sprouts on a baking tray, coat with oil, and bake for 30-40 minutes, tossing halfway through until browned and crisp.
  4. Remove from the oven, drizzle with the balsamic-maple reduction, toss to coat, and top with bacon.
  5. Serve immediately.
