Ingredients

Dry Ingredients

  • 2 and 1/3 cups all-purpose flour
  • ¾ cup granulated sugar
  • 3 Tablespoons poppy seeds
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup salted butter, melted
  • 6–7 Tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ¼ cup fresh orange juice
  • 1 teaspoon orange zest
  • 2 large eggs
  • ½ cup non-fat or low-fat Greek yogurt
  • ¼ cup milk
  • 1 teaspoon pure vanilla extract

Toppings

  • to taste coarse sugar

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. In a large bowl, mix the dry ingredients together until combined.
  3. In another bowl, whisk together the wet ingredients until well combined.
  4. Combine the wet ingredients with the dry ingredients, mixing gently until just combined.
  5. Fill the muffin tins to the top with batter and sprinkle with coarse sugar.
  6. Bake at 425°F (218°C) for 5 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 10-13 minutes.
  7. Allow muffins to cool for 10 minutes before serving.
