Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- In a large bowl, mix the dry ingredients together until combined.
- In another bowl, whisk together the wet ingredients until well combined.
- Combine the wet ingredients with the dry ingredients, mixing gently until just combined.
- Fill the muffin tins to the top with batter and sprinkle with coarse sugar.
- Bake at 425°F (218°C) for 5 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 10-13 minutes.
- Allow muffins to cool for 10 minutes before serving.
