Easy Morning Sheet Pan Pancakes with Almond Flour

Ingredients

The batter

  • cups super fine almond flour
  • ¾ cup coconut flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • ¼ cup monk fruit
  • ½ teaspoon salt
  • 6 large eggs
  • 1¼-1½ cups unsweetened almond milk
  • 1 tablespoon vanilla extract

Optional add-ins

  • to taste strawberries
  • to taste blueberries
  • to taste raspberries
  • to taste chocolate chips

Instructions

  1. Preheat the oven to 425ºF and line a half sheet pan with parchment paper.
  2. In a large bowl, combine all of the ingredients except for the stir-ins and mix until you have a thick batter.
  3. Transfer the batter onto the prepared baking sheet and even it out with a rubber spatula.
  4. Add your choice of toppings, dividing the pan if using multiple toppings.
  5. Bake for 12-15 minutes until set, golden brown, and fragrant.
  6. Cut into 12 servings and enjoy with your favorite toppings.
