Instructions
- Cut the cantaloupe in half and remove the seeds.
- Reserve half of the cantaloupe for later use.
- Cut the remaining half into quarters and remove the rind.
- Slice the melon into thin pieces.
- In a small bowl, mix lime juice, honey, salt, and crushed red pepper until the honey dissolves.
- Pour the dressing over the cantaloupe and toss to coat.
- Serve immediately or chill until ready to eat, stirring before serving.
