Ingredients

The fruit

  • ½ medium cantaloupe

The dressing

  • 1½-2 Tbsp fresh lime juice
  • ½ Tbsp honey
  • tsp salt
  • tsp crushed red pepper

Instructions

  1. Cut the cantaloupe in half and remove the seeds.
  2. Reserve half of the cantaloupe for later use.
  3. Cut the remaining half into quarters and remove the rind.
  4. Slice the melon into thin pieces.
  5. In a small bowl, mix lime juice, honey, salt, and crushed red pepper until the honey dissolves.
  6. Pour the dressing over the cantaloupe and toss to coat.
  7. Serve immediately or chill until ready to eat, stirring before serving.
