Ingredients

The crust

  • 3 ½ cups Cocoa PEBBLES™
  • ½ cup butter, melted

The filling

  • 11 ½ ounces chocolate chips
  • ½ cup salted butter, softened
  • ¾ cup packed light brown sugar
  • 3 large eggs
  • ½ cup gluten-free flour blend with xanthan gum
  • 2 teaspoons vanilla extract

For serving

  • to taste whipped cream

Instructions

  1. Preheat the oven to 350°F.
  2. Crush the Cocoa PEBBLES™ in a food processor and mix with melted butter until moist.
  3. Press the mixture into a 9-inch pie plate and bake for 16 minutes, then allow to cool.
  4. Melt the chocolate chips in a double boiler and let cool slightly.
  5. In an electric mixer, beat the softened butter and brown sugar until fluffy, then add eggs one at a time.
  6. Stir in the melted chocolate, gluten-free flour, and vanilla extract.
  7. Pour the filling into the cooled crust and bake for 20 to 25 minutes, protecting the edges for the last 10 minutes.
  8. Cool on a wire rack for 1 hour and refrigerate for at least 1 hour before serving.
  9. Serve with whipped cream.
