Ingredients

The crust

  • 7 whole graham crackers
  • ¼ cup unsalted butter
  • 2 tablespoons sugar

The chocolate layer

  • 1⅓ cups bittersweet or semisweet chocolate chips
  • cup chilled whipping cream
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract

The peanut butter mousse

  • cups chilled whipping cream
  • 6 ounces peanut butter chips
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar

For decoration

  • to taste chopped salted peanuts

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch pie dish with nonstick spray.
  2. Blend graham crackers, melted butter, and 2 tablespoons of sugar in a food processor until clumps form, then press into the pie dish and bake until lightly browned.
  3. In a microwave-safe bowl, combine chocolate chips, ⅔ cup of cream, corn syrup, and 1 teaspoon of vanilla. Microwave until chocolate softens, then whisk until smooth and spread over the crust.
  4. Freeze the chocolate layer for 10 minutes.
  5. In another bowl, microwave peanut butter chips and ¾ cup of cream until softened, then whisk in peanut butter and 1 teaspoon of vanilla. Cool to lukewarm.
  6. Beat the remaining 1 cup of cream with 2 tablespoons of sugar until thick, then fold into the peanut butter mixture.
  7. Spoon the mousse over the chocolate layer and chill for at least 1 hour before serving.
