Paleo Chocolate Pie

Ingredients

  • 1⅔ cups chocolate chips
  • 6 large eggs, separated
  • 1 tablespoon honey
  • ¼ teaspoon celtic sea salt

Instructions

  1. Melt chocolate in a saucepan over very low heat and remove from heat.
  2. In a medium bowl, beat egg yolks with honey for 1 minute using a hand blender.
  3. In a large bowl, beat egg whites with a hand blender until stiff peaks form.
  4. Stir the egg yolk mixture into the warm chocolate until combined; the mixture should be thickened and shiny.
  5. Stir in the salt.
  6. Fold the beaten egg whites into the chocolate mixture carefully.
  7. Transfer the mixture into a cooked and cooled pie crust.
  8. Refrigerate for 3 hours before serving.
