Paleo White Chocolate Pie

Ingredients

Paleo Pie Crust

  • 1 cup almond flour
  • 4 pieces soft pitted Medjool dates
  • a pinch sea salt

Paleo Pie Filling

  • 2 oz cacao butter
  • 1 can (13 oz) full-fat coconut milk
  • ΒΌ cup honey
  • 8 drops vanilla stevia (optional)
  • 1 tablespoon grass-fed gelatin

Instructions

  1. Process the crust ingredients in a food processor until they clump together.
  2. Press the crust mixture into a 7-inch springform pan and set aside.
  3. Simmer the coconut milk in a saucepan, then whisk in the gelatin until dissolved.
  4. Add honey and vanilla to the coconut milk mixture, then blend with a vent to release steam.
  5. Melt the cacao butter in a bowl over simmering water, then combine with the other liquids.
  6. Blend until smooth and pour over the crust.
  7. Refrigerate until set for at least a few hours.
  8. To serve, heat a knife in hot water, run it around the pie, and slice.
