Paleo White Chocolate Pie

full-fat coconut milk

Instructions
- Process the crust ingredients in a food processor until they clump together.
- Press the crust mixture into a 7-inch springform pan and set aside.
- Simmer the coconut milk in a saucepan, then whisk in the gelatin until dissolved.
- Add honey and vanilla to the coconut milk mixture, then blend with a vent to release steam.
- Melt the cacao butter in a bowl over simmering water, then combine with the other liquids.
- Blend until smooth and pour over the crust.
- Refrigerate until set for at least a few hours.
- To serve, heat a knife in hot water, run it around the pie, and slice.
