Ingredients

The crust

  • 1 ½ cups blanched almond flour
  • ¼ cup cacao powder
  • ¼ cup melted coconut oil
  • 2 tablespoons maple syrup
  • ¼ teaspoon fine sea salt

The filling

  • 16 ounces semi-sweet chocolate chips
  • 1 cup full-fat coconut milk
  • 1 teaspoon vanilla extract or peppermint extract
  • ¼ teaspoon fine sea salt

Optional toppings

  • to taste shaved chocolate or crushed candy canes

Instructions

  1. Preheat the oven to 350ºF and prepare a 9-inch pie pan.
  2. Combine almond flour, cacao powder, melted coconut oil, maple syrup, and salt in a bowl to make the crust.
  3. Press the crust mixture into the pie pan and bake for 15 minutes, then let it cool.
  4. Melt the chocolate chips using a double boiler method.
  5. Blend the full can of coconut milk until smooth and measure out 1 cup for the filling.
  6. Mix the melted chocolate with the coconut milk, vanilla or peppermint extract, and salt until well combined.
  7. Pour the filling into the cooled crust and add any optional toppings.
  8. Chill the pie in the fridge for 4 to 6 hours until firm.
