Ingredients

The crust

  • 2 cups fine almond flour
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 large room temperature egg
  • 2 tbsp coconut sugar
  • ¼ cup melted coconut oil

The filling

  • cup coconut sugar
  • ½ cup coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 3 cups pecan halves
  • 2 large eggs
  • 1 cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and grease a 9-inch pie dish.
  2. 2. In a large bowl, mix the almond flour, baking soda, cinnamon, and salt for the crust.
  3. 3. In a small bowl, whisk together the egg, coconut sugar, and melted coconut oil.
  4. 4. Combine the wet and dry ingredients until a dough forms, then press it into the pie dish.
  5. 5. Bake the crust for 8 minutes and let it cool.
  6. 6. For the filling, heat the coconut sugar, coconut oil, and maple syrup in a saucepan until boiling, then simmer for 4-5 minutes.
  7. 7. Remove from heat and let it cool to room temperature, then stir in the vanilla and salt, followed by the eggs.
  8. 8. Chop 2 cups of pecans and mix them into the filling along with ¾ cup of chocolate chips.
  9. 9. Pour the filling into the crust and top with the remaining pecans and chocolate chips.
  10. 10. Bake for 40 minutes, then let it cool before serving.
