Ingredients

Croutons

  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 1–2 teaspoons gluten free Worcestershire sauce
  • cup olive oil
  • ¼–⅓ cup freshly grated Parmesan
  • ¼ teaspoon sea salt
  • to taste black pepper black pepper
  • pinch or two cayenne or paprika

Spicy Shrimp

  • 6–8 ounces medium shrimp
  • ¼ to ½ teaspoon chili powder
  • teaspoon onion powder
  • ½ teaspoon pure olive oil or melted butter
  • pinch sea salt sea salt
  • dash ground pepper ground pepper

Salad

  • 6 cups fresh torn romaine and spinach
  • ½ cup sliced vegetables (cucumber or carrot)
  • ½ small avocado
  • to garnish shaved Parmesan shaved Parmesan

Instructions

  1. Preheat the oven to 350°F and prepare the croutons by tossing cubed bread with oil, garlic powder, and salt, then baking until golden.
  2. For the dressing, mince the garlic and combine it with egg yolk, lemon juice, dijon, Worcestershire sauce, and olive oil, whisking until smooth.
  3. Adjust the oven to 450°F for the shrimp, tossing them with olive oil and spices, then baking until opaque.
  4. In a large bowl, combine the torn romaine and spinach with any additional vegetables.
  5. Add the cooled croutons, shrimp, avocado, and Parmesan to the greens, then drizzle with dressing and toss gently.
