Ingredients

The salad

  • 1 lb Shrimp (peeled, deveined, and patted dry)
  • 1 head Romaine lettuce (chopped; ~8 cups)
  • 2 cups Roma tomatoes (diced)
  • 6 tbsp Parmesan cheese (shaved or shredded; omit for dairy-free)

The dressing and seasoning

  • ½ cup Caesar salad dressing
  • 1 tbsp Cajun seasoning
  • 2 tbsp Olive oil

Instructions

  1. Make the Caesar dressing and set aside.
  2. Toss the shrimp with Cajun seasoning to coat evenly.
  3. Heat olive oil in a large skillet over medium-high heat and add shrimp in a single layer. Sear for 1 minute, then flip and sear another 1-2 minutes until cooked through.
  4. In a large bowl, toss chopped romaine with the dressing, tomatoes, and parmesan. Divide among plates or bowls and top each serving with Cajun shrimp.
