Ingredients

  • 1 cup cherry tomatoes, halved
  • ½ each avocado, sliced
  • 1 each lime, juice of

The dressing and seasoning

  • 2 tablespoons avocado or olive oil
  • tablespoons Cajun spice mix

Cajun spice mix

  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground black pepper

Instructions

  1. Season the shrimp with the Cajun spice mix in a medium bowl, ensuring they are evenly coated.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat, then add the seasoned shrimp and sauté until they turn pink, about 2-3 minutes.
  3. Remove the shrimp from heat and set aside.
  4. On a plate, arrange the greens and top with the Cajun shrimp, red onion, cherry tomatoes, and avocado.
  5. Drizzle with the remaining oil and squeeze lime juice over the salad before serving.
