Shrimp Salad

Ingredients

The salad

  • 1 pound medium-sized shrimp
  • ¼ cup finely diced onion
  • cup mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Creole seasoning
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1-2 pieces green onions, finely diced
  • 1 tablespoon dill, chopped

The cooking liquid

  • 3 quarts water
  • 1 tablespoon salt

Instructions

  1. Bring 3 quarts of water with 1 tablespoon of salt to a boil.
  2. Add the shrimp and reduce the heat, covering the pan to simmer for 3-5 minutes until the shrimp are opaque and pink.
  3. Drain the shrimp immediately and cool completely.
  4. In a large mixing bowl, combine onion, mayonnaise, mustard, Creole seasoning, lemon juice, and lemon zest. Season with salt and pepper.
  5. Add the cooled shrimp and chopped green onions to the mixture and mix until fully combined.
  6. Garnish with chopped dill and cover with plastic wrap.
  7. Refrigerate until ready to serve.
