Shrimp Salad

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 whole lemon, quartered
  • ½ cup celery, finely diced
  • 3 tablespoons red onion, minced
  • 2 teaspoons lemon juice
  • to taste salt
  • to taste pepper
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • tablespoons fresh dill, chopped

Instructions

  1. 1. Boil a pot of salted water and add the quartered lemon.
  2. 2. Cook the shrimp in the boiling water for 2-3 minutes until pink and opaque.
  3. 3. Transfer the shrimp to a bowl of ice water to stop the cooking.
  4. 4. Drain and pat the shrimp dry.
  5. 5. In a bowl, combine the shrimp, celery, red onion, lemon juice, salt, pepper, mayonnaise, mustard, and dill.
  6. 6. Toss gently to coat the ingredients.
  7. 7. Garnish with additional dill and serve, or refrigerate for later.
