Seafood Salad

Ingredients

The seafood

  • 8 ounces imitation crab meat
  • 8 ounces raw shrimp

The vegetables and seasoning

  • ½ cup celery, finely diced
  • 3 tablespoons red onion, minced
  • ½ teaspoon Old Bay seasoning
  • 2 teaspoons lemon juice
  • salt and pepper to taste

The dressing

  • ½ cup mayonnaise
  • tablespoons fresh dill, chopped

The garnish

  • 1 lemon quartered

Instructions

  1. Boil a pot of salted water and add the quartered lemon.
  2. Cook the shrimp in the boiling water for 1-2 minutes until pink and opaque, then transfer to an ice water bath.
  3. Drain the shrimp and pat dry.
  4. In a bowl, combine the shrimp, imitation crab, celery, red onion, Old Bay seasoning, lemon juice, salt, pepper, mayonnaise, and dill.
  5. Toss gently to coat and garnish with additional dill before serving.
