Instructions
- 1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.
- 2. Cook the shrimp in boiling water until pink and opaque, about 2-3 minutes, then transfer to ice water to cool for about 10 minutes.
- 3. In a medium bowl, mix together mayonnaise, lemon juice, lemon zest, celery, red onion, parsley, and dill.
- 4. Drain the shrimp, remove the shells and tails, and dry them.
- 5. Toss the shrimp with the dressing and season with salt and pepper to taste. Serve in buns with lettuce or in lettuce leaves.
