Shrimp Salad

Ingredients

The salad

  • 2 lbs medium shrimp, deveined, shells on
  • ½ cup mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ¾ cup diced celery
  • cup diced red onion
  • 2 Tbsp chopped fresh parsley
  • Tbsp minced fresh dill
  • to taste salt and black pepper
  • to taste paprika and/or cayenne pepper

For serving

  • 6 hot dog buns or smaller hoagie buns
  • 6 lettuce leaves (romaine, butter lettuce, or iceberg)

Instructions

  1. 1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.
  2. 2. Cook the shrimp in boiling water until pink and opaque, about 2-3 minutes, then transfer to ice water to cool for about 10 minutes.
  3. 3. In a medium bowl, mix together mayonnaise, lemon juice, lemon zest, celery, red onion, parsley, and dill.
  4. 4. Drain the shrimp, remove the shells and tails, and dry them.
  5. 5. Toss the shrimp with the dressing and season with salt and pepper to taste. Serve in buns with lettuce or in lettuce leaves.
