Shrimp Avocado Salad

Ingredients

The shrimp

  • 1 lb Large shrimp (31/40 size, peeled and deveined)
  • 1 tbsp Cajun seasoning
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Lime juice

The salad

  • 1 medium Avocado (chopped)
  • ½ medium Red onion (sliced thinly)
  • 1 large Red bell pepper (chopped)

The dressing

  • ¼ cup Fresh cilantro (chopped)
  • 2 tbsp Olive oil
  • 1 tbsp Lime juice
  • 1 tsp Sea salt
  • ½ tsp Black pepper

Instructions

  1. Marinate the shrimp with Cajun seasoning, olive oil, minced garlic, and lime juice for 10-15 minutes.
  2. Prepare the salad ingredients by chopping the avocado, red onion, and bell pepper.
  3. Make the dressing by whisking together cilantro, olive oil, lime juice, sea salt, and black pepper.
  4. Cook the marinated shrimp in a skillet over medium-high heat for 2-3 minutes per side until pink and opaque.
  5. Combine the chopped vegetables, cooked shrimp, and dressing in a large bowl and stir gently to coat.
