Ingredients

  • 1 pound raw small or medium-sized shrimp, peeled and deveined
  • 2 ripe avocados, peeled, cored, and diced
  • 1 ripe mango, peeled, cored, and diced
  • ¼ cup red onion, finely chopped
  • 2 limes juiced (about ¼ cup)
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt
  • teaspoon ground black pepper
  • ¼ cup cilantro, chopped (optional for garnish)

Instructions

  1. Boil the shrimp in a medium pot of water until cooked through, about 2-3 minutes, then drain and let cool.
  2. Peel and cut the avocados and mango into bite-sized chunks, and finely chop the red onion and cilantro.
  3. Whisk together lime juice, olive oil, salt, and pepper in a small bowl to make the dressing.
  4. Combine the cooled shrimp, mango, avocado, and red onion in a large bowl, then pour the dressing over and toss to coat.
  5. Garnish with cilantro and serve at room temperature or chilled.
