Avocado Mango Shrimp Salad

Instructions
- Boil the shrimp in a medium pot of water until cooked through, about 2-3 minutes, then drain and let cool.
- Peel and cut the avocados and mango into bite-sized chunks, and finely chop the red onion and cilantro.
- Whisk together lime juice, olive oil, salt, and pepper in a small bowl to make the dressing.
- Combine the cooled shrimp, mango, avocado, and red onion in a large bowl, then pour the dressing over and toss to coat.
- Garnish with cilantro and serve at room temperature or chilled.
