Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon Old Bay seasoning
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil, divided
  • 1 cup chopped avocado
  • ¼ cup chopped red onion
  • ½ tablespoon chopped jalapeño
  • 1 cup chopped cucumber
  • 2 tablespoons chopped fresh cilantro
  • 8 pieces cherry tomatoes, sliced in half
  • ½-1 fresh lime juice
  • 2 teaspoons fresh chopped basil

Instructions

  1. Season the raw shrimp with Old Bay seasoning, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  3. Add the shrimp and cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes until bright pink.
  4. Remove the shrimp from the skillet.
  5. In a large bowl, combine the shrimp, avocado, tomatoes, basil, remaining olive oil, lime juice, cucumbers, onions, jalapeño, and cilantro.
  6. Stir to combine and season with salt and pepper to taste.
  7. Chill the salad for an hour or serve immediately.
