Paleo Salted Caramel Brownies

Ingredients

Brownies

  • 1 cup almond flour
  • 1 cup coconut sugar
  • 1 tsp cinnamon
  • 2 large eggs
  • 4 tbsp butter
  • 2 tsp baking soda
  • 1 bar chocolate of choice
  • to taste sea salt

Caramel Sauce

  • ¾ cup coconut sugar
  • ¼ cup coconut oil
  • ¼ cup full fat coconut milk

Instructions

  1. Preheat the oven to 350°F.
  2. In a small pot, combine the caramel sauce ingredients over low heat and stir until dissolved and thickened.
  3. Remove the caramel from heat and pour it onto a parchment-lined plate. Freeze for 1 hour.
  4. In a medium bowl, mix the brownie ingredients until well combined.
  5. Melt the chocolate and butter together in the microwave, then add to the brownie mixture and mix well.
  6. Line an 8x8 baking dish with parchment paper and pour in the brownie batter.
  7. Chop half of the caramel into squares and place on top of the brownies, returning the rest to the freezer.
  8. Bake for about 40 minutes or until a toothpick comes out clean.
  9. Let the brownies cool before topping with the remaining caramel and slicing into squares.
