Healthy Salted Caramel Cookies

Ingredients

The cookies

  • 2 cups almond flour
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • ½ tsp salt
  • 1 tsp vanilla

The caramel

  • ¼ cup coconut cream
  • ¼ cup coconut sugar
  • 1 tsp coconut oil
  • ½ tsp salt
  • 1 tsp vanilla

Optional toppings

  • to taste flaked sea salt
  • to taste melted chocolate
  • to taste chopped pecans

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix all cookie ingredients until well combined.
  3. Shape the dough into cookies and press down the center using a teaspoon.
  4. Bake for 20 minutes until golden brown, then press down the center again.
  5. While cookies cool, make the caramel by combining coconut cream, coconut sugar, coconut oil, and salt in a saucepan over medium heat, stirring consistently.
  6. Once boiling, reduce heat and stir for 10-15 minutes until thickened.
  7. Remove from heat and stir in vanilla.
  8. Add 1 teaspoon of caramel to the center of each cookie.
  9. Optionally drizzle with melted chocolate, sprinkle with pecans, and add flaked sea salt.
