The caramel

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix all cookie ingredients until well combined.
- Shape the dough into cookies and press down the center using a teaspoon.
- Bake for 20 minutes until golden brown, then press down the center again.
- While cookies cool, make the caramel by combining coconut cream, coconut sugar, coconut oil, and salt in a saucepan over medium heat, stirring consistently.
- Once boiling, reduce heat and stir for 10-15 minutes until thickened.
- Remove from heat and stir in vanilla.
- Add 1 teaspoon of caramel to the center of each cookie.
- Optionally drizzle with melted chocolate, sprinkle with pecans, and add flaked sea salt.
