Ingredients

The shrimp

  • 1 lb raw, peeled and deveined shrimp
  • ½ cup coconut flour
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 2 units eggs
  • 1 tbsp honey
  • ¾ cup shredded coconut

The tropical sauce

  • cup plain Greek yogurt
  • ¼ cup crushed pineapple
  • 3 tbsp shredded coconut
  • 1 tbsp honey
  • ¼ tsp salt

Instructions

  1. Clean and dry the shrimp.
  2. Prepare three bowls: one with coconut flour, smoked paprika, salt, and pepper; another with eggs and honey; and the last with shredded coconut.
  3. Dredge each shrimp in the coconut flour mixture, then in the egg mixture, and finally coat with shredded coconut.
  4. Place the coated shrimp in the air fryer at 375°F for 10-12 minutes until golden brown.
  5. While the shrimp are cooking, mix the tropical sauce ingredients together and adjust to taste.
  6. Serve the shrimp with the tropical sauce.
