Ingredients

The shrimp

  • 1 pound large shrimp

The batter

  • 1 egg egg
  • ¾ cup buttermilk or coconut milk
  • ½ cup flour

The coating

  • ½ cup breadcrumbs
  • cups coconut flakes
  • ¾-1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme (optional)

Marmalade Dip

  • 1 cup marmalade
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard

Sriracha Dipping Sauce

  • ½ cup mayonnaise
  • teaspoon garlic powder
  • ¼ teaspoon paprika
  • 1 teaspoon lemon juice
  • 1-2 tablespoons sriracha

Instructions

  1. Prepare the marmalade dip and sriracha sauce by mixing the ingredients and refrigerating them.
  2. Preheat the air fryer to 400°F (200°C) and prepare the basket with parchment paper and cooking spray.
  3. Peel and devein the shrimp, leaving the tails on, and butterfly them.
  4. Whisk together the egg, buttermilk or coconut milk, and flour to create a smooth batter.
  5. In another bowl, combine the breadcrumbs, coconut flakes, and spices.
  6. Dip each shrimp in the batter, then roll it in the coconut mixture.
  7. Place the shrimp in a single layer in the air fryer and cook for 3-4 minutes.
  8. Flip the shrimp and cook for an additional 3 minutes until golden.
  9. Repeat the cooking process until all shrimp are cooked.
