Instructions
- Prepare the marmalade dip and sriracha sauce by mixing the ingredients and refrigerating them.
- Preheat the air fryer to 400°F (200°C) and prepare the basket with parchment paper and cooking spray.
- Peel and devein the shrimp, leaving the tails on, and butterfly them.
- Whisk together the egg, buttermilk or coconut milk, and flour to create a smooth batter.
- In another bowl, combine the breadcrumbs, coconut flakes, and spices.
- Dip each shrimp in the batter, then roll it in the coconut mixture.
- Place the shrimp in a single layer in the air fryer and cook for 3-4 minutes.
- Flip the shrimp and cook for an additional 3 minutes until golden.
- Repeat the cooking process until all shrimp are cooked.
