Simple Classic Shortbread
Ingredients
The dough

unsalted butter, room temperature

granulated sugar

For sprinkling

sparkling sugar, superfine sugar, or granulated sugar, optional
Instructions
- Preheat the oven to 325ºF.
- If the butter is not very soft, melt two tablespoons and mix it with the softened butter until the texture resembles mayonnaise.
- Add the salt and mix well.
- Incorporate the sugar and vanilla (if using) and stir again.
- Gradually add the flour and mix until just absorbed; the dough will be lumpy.
- Press the dough into an ungreased or parchment-lined 8- or 9-inch square baking pan.
- Bake for 35 to 40 minutes until golden brown.
- Cool on a wire rack and cut into squares while still warm, sprinkling with sugar if desired.
