Shortbread Cookies

Instructions
- Cream the butter in a stand mixer or with an electric mixer.
- Add the sugar and vanilla, then beat until fluffy.
- Mix in the flour and salt on low speed until combined.
- Turn the dough onto a floured surface and divide it in half.
- Shape each half into a rectangular block about 2 inches wide and 1 inch thick.
- Wrap the blocks in plastic wrap and chill for 1 hour.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Unwrap the dough and cut it into ½-inch-thick slices.
- Arrange the slices on the baking sheets, leaving space between them.
- Poke holes in each cookie with a toothpick for decoration.
- Bake for 10 minutes until the edges are golden brown.
- Cool on the baking sheets for 10 minutes before transferring to a wire rack.
